Mustard is, as is "hot sauce" (which is more a garlicky, meat-paste grease). I think a mustard reduction is an interesting take on the mustard and "hot sauce" standards. This has been on my list to try for a while. Plates used to be part of my standard diet, probably 3-4 of them a week. Same goes for the garbage plate - if you want an imitation, go to Philly - but all you'll get is an imitation. BTW...
