Head (Cheese) Of The Class

Real Talk. We were sad to see Chef Ngo leave Fork. As one of the only bastions of real cookery in the OC, we worried if everything we knew and loved about the stalwart spot was about to disappear. But we had faith in owner Ellen Yin‘s judgment to bring on food scenester Terence Feury to helm her kitchen.

We stopped by last night to sample a few things, and were taken aback by the beautiful plate pictured above. An $18 charcuterie unlike anything you’ve had in town, featuring head cheese, pork sausage with garlic and pistachio, duck 2 ways (prosciutto and rillette), and a scrupmtuous terrine. Recession special. Hot mustard. A pickled veggie selection with a hauntingly rusty vinaigrette. What more could you want? A glass of Portugese table wine forĀ 8 bucks.
