Chipotle Slows It Down

chipotleIt’s great living an eco-friendly lifestyle filled with great eco-friendly brands: Whole Foods…TOMS Shoes…Chipotle Mexican Grill? Thanks to last night’s episode of Nightline, we learned that many advantages of the slow food movement quickly have reached the institutional level. Chipotle, the Panera of the fast food burrito world, now shuns corporate pork farms, where pigs live and die in cramped confinement, in favor of smaller-scale free range suppliers. Chipotle is also making strides when it comes to chicken and beef, eliminating (chicken) or significantly reducing (cattle) the levels of antibiotics given to the animals. While there are downsides to this approach (namely higher food costs and difficulty finding enough free range farmers to provide for the whole Chipotle chain), the benefits in terms of quality and environmental common sense seem obvious. When you watch the clip, don’t miss beginning at the -05:20 mark, when free range farmer Joel Salatin gets buzzed talking about respecting the “pigness of the pig”; check out the video here.
