The Oyster House: Gone Ice Fishin’

logoThe Oyster House shook some hands, kissed some babies, and made offers people couldn’t refuse to obtain a special shipment of Nunavut Arctic Char. This rare fish swims in freshwater and saltwater in the coldest lakes and coastal water regions of the Northern Hemisphere. Known to taste like a meld of salmon and trout, the Arctic Char is only available for about 6 weeks a year and the Oyster House has reeled in four 10 pound big’uns. (Usually the Nunavut Arctic Char weighs 2 to 5 lb.) The Oyster House prepares the fish one of two ways: Smoked with pickled vegetables, or with red wine bone marrow sauce and served with root vegetables. Taste what all of Canada is talkin’ about but no one knew, because hey, it’s Canada.
